Jersey Corn with a Kick

 

 

People typically think of steaks, burgers and hot dogs when grilling but it’s a great way to cook up your veggies as well. Fresh Jersey Corn is great on the grill!

Corn

4 ears of fresh Jersey Corn, husked

Chipotle – Lime Butter

6 tablespoons (¾ stick) unsalted butter, softened

3 tablespoons finely chopped fresh cilantro leaves

2 teaspoons finely grated lime zest

2 teaspoons honey

1-½ teaspoons minced canned chipotle chiles in adobo sauce

½ teaspoon kosher salt

⅛ teaspoon freshly ground black pepper

4 lime wedges

Let’s Get Started

First fire up the grill for direct cooking over medium heat (350° to 450°F).

Then mash all the butter ingredients together in a bowl. Make sure the seasonings are mixed in evenly. If you want your butter to have an extra kick, add more chipotle chiles, using ¼ teaspoon at a time until you reach the desired heat.

Spread each ear of corn very lightly with 1 to 2 teaspoons of the butter mixture.

Brush the cooking grates clean. Over direct medium heat, grill the corn with the lid closed as much as possible. Grill for 12 to 15 minutes, turning a few times, until tender and slightly browned in spots.  Serve the corn warm, spread with the remaining butter and lime wedges on the side.

Serves 4, 10 minutes prep time.
