Simply Seasoned Grilled Chicken Breast

Just got back from a long day at the beach and everyone is starving? You want to have a good meal but don’t feel up to a lot of cooking. Try this simply seasoned grilled chicken breast. Quick and tasty!

INGREDIENTS

  • 4 boneless, skinless chicken breast halves, approx. 8 ounces each
  • Extra-virgin olive oil

RUB

  • ½ teaspoon prepared chili powder
  • ½ teaspoon freshly ground black pepper
  • ¾ teaspoon salt
  • 1 teaspoon granulated garlic
  • 1 teaspoon granulated onion

INSTRUCTIONS

Prepare the grill for direct cooking over medium heat (350° to 450°F). While the grill is getting hot, mix the rub ingredients in a small bowl. Brush the chicken lightly on both sides with oil and season evenly with the rub. Press the spices into the meat.

Brush the cooking grates clean. Grill the chicken breasts over direct medium heat, keeping the lid closed as much as possible. Cook until the meat is firm to the touch and no longer pink in the center, 8 to 12 minutes, turning once or twice. Remove from the grill and let rest for 3 to 5 minutes. Serve warm with a fresh summer salad on the side.
